Sallea Secures $2.6 Million to Revolutionize Cultivated Meat Production

In a significant boost for the cellular agriculture sector, foodtech startup Sallea has announced a successful funding round of $2.6 million, aimed at advancing the production of premium whole cuts of cultivated meat and fish. Founded in November 2023 by an innovative all-female team, Sallea is poised to redefine how cultivated proteins are produced, moving beyond traditional products like sausages and minced meat.

Sallea’s groundbreaking technology features the creation of edible, porous, and precisely structured 3D scaffolds. These scaffolds serve as the foundational matrix for growing textured whole cuts of meat and fish in bioreactors. By allowing cells to attach and proliferate in three dimensions, Sallea enhances both the nutritional profile and texture of the final products. This novel approach enables manufacturers to customize the size, shape, and nutritional attributes of their cultivated meats.

As Simona Fehlmann, CEO and co-founder, highlights, “Cultivated foods have been limited to sausages and minced meat. Our technology has the potential to kick-start cellular agriculture by accelerating time to market and lowering production costs for cultivated whole cuts such as steaks and fillets.” This funding will facilitate production capacity upgrades, strategic partnerships for product co-development, and intensified research efforts, positioning Sallea as a frontrunner in edible scaffold technology.

The pre-seed funding round was spearheaded by Founderful, with contributions from Kost Capital. This investment marks Sallea’s first equity influx, supplementing the $1.8 million secured through various research and startup grants.
